Pork with Mint-Cilantro Sauce
Cilantro Mashed Potatoes and Green Peas
Ingredients
- ¾ lb boneless pork chops
- ¼ tsp salt, divided
- ⅛ tsp pepper
- 2 tsp olive oil
- ¼ cup plain whole milk Greek yogurt
- 2 Tbsp chopped fresh mint
- 2 Tbsp chopped fresh cilantro
- 1 Tbsp lime juice
- 1 clove garlic, minced
Instructions
- Sprinkle pork with ⅛ tsp salt and pepper. Cook pork in hot oil in a large skillet over medium-high heat. 5 to 6 minutes per side or until done.
- Meanwhile, process yogurt, mint, cilantro, lime juice, ⅛ tsp salt, and garlic in a food processor or blender until smooth, adding water as needed to reach a pourable consistency.

- 1 cup refrigerated mashed potatoes
- 1 Tbsp chopped fresh cilantro
- 1 cup frozen green peas
- 1 Tbsp butter
- ¼ tsp pepper
Side Dish Instructions
- Heat potatoes according to package directions. Stir in cilantro.
- Cook peas according to package directions. Stir in butter and pepper.
