Steak and Eggs
Bloody Mary Tomato Salad
Ingredients
- 1 lb top sirloin steak
- ¼ tsp salt, divided
- ¼ tsp pepper, divided
- 1½ Tbsp olive oil, divided
- 3 large eggs
Instructions
- Sprinkle steak with ⅛ tsp each salt and pepper. Cook steak in ½ Tbsp hot oil over medium-high heat in a large nonstick skillet 5 to 8 minutes per side or to desired doneness. Let stand 5 minutes. Thinly slice across the grain.
- Heat 1 Tbsp oil in a skillet over medium heat; crack eggs into skillet. Cook 2 minutes per side or until whites are set and yolks are cooked to desired doneness. Sprinkle with ⅛ tsp each salt and pepper.

- ¼ cup olive bruschetta topping
- ½ Tbsp oil from bruschetta jar
- ¾ Tbsp sherry vinegar
- ½ Tbsp Worcestershire sauce
- 1 tsp prepared horseradish
- ½ tsp hot sauce
- 1½ cups grape tomatoes, halved
- ¼ cup sliced celery
- ¼ cup chopped red onion
Side Dish Instructions
- Combine bruschetta topping, oil, vinegar, Worcestershire, horseradish, and, if desired, hot sauce in a large bowl. Stir in tomatoes, celery, and onion.
