Bloody Mary Tomato Salad

Ingredients

  • 1 lb top sirloin steak
  • ¼ tsp salt, divided
  • ¼ tsp pepper, divided
  • 1½ Tbsp olive oil, divided
  • 3 large eggs

Instructions

  1. Sprinkle steak with ⅛ tsp each salt and pepper. Cook steak in ½ Tbsp hot oil over medium-high heat in a large nonstick skillet 5 to 8 minutes per side or to desired doneness. Let stand 5 minutes. Thinly slice across the grain.
  2. Heat 1 Tbsp oil in a skillet over medium heat; crack eggs into skillet. Cook 2 minutes per side or until whites are set and yolks are cooked to desired doneness. Sprinkle with ⅛ tsp each salt and pepper.

Side Dish Ingredients

  • ¼ cup olive bruschetta topping
  • ½ Tbsp oil from bruschetta jar
  • ¾ Tbsp sherry vinegar
  • ½ Tbsp Worcestershire sauce
  • 1 tsp prepared horseradish
  • ½ tsp hot sauce
  • 1½ cups grape tomatoes, halved
  • ¼ cup sliced celery
  • ¼ cup chopped red onion

Side Dish Instructions

  1. Combine bruschetta topping, oil, vinegar, Worcestershire, horseradish, and, if desired, hot sauce in a large bowl. Stir in tomatoes, celery, and onion.
