Spring Cobb Salad
Honey-Basil Fruit TossIngredients
- 1 lb asparagus, trimmed
- 1½ cups frozen sweet peas
- ¼ cup water
- 2 (5-oz) pkg spring mix
- 1 (6-oz) pkg sliced prosciutto
- 6 hard cooked eggs, halved
- 2 avocados, sliced
- 1 small red onion, thinly sliced
- ¾ cup crumbled feta cheese
- 1 (0.5-oz) pkg fresh dill, chopped
- ¾ cup green goddess dressing
Instructions
- Combine asparagus, peas, and water in a microwave-safe dish. Cover with plastic wrap, venting one corner. Microwave at HIGH 3 minutes or until asparagus is crisp-tender and peas are thoroughly heated.
- Divide greens among plates; top with asparagus mixture, prosciutto, eggs, avocado, onion, cheese, and dill. Serve with dressing.
Side Dish Ingredients
- 3 navel oranges
- 1 (16-oz) pkg strawberries, halved
- 1 (0.5-oz) pkg fresh basil, chopped
- 2 Tbsp honey
Side Dish Instructions
- Peel and section oranges over a large bowl. Add remaining ingredients, and gently toss.
