Ingredients

  • 1 lb asparagus, trimmed
  • 1½ cups frozen sweet peas
  • ¼ cup water
  • 2 (5-oz) pkg spring mix
  • 1 (6-oz) pkg sliced prosciutto
  • 6 hard cooked eggs, halved
  • 2 avocados, sliced
  • 1 small red onion, thinly sliced
  • ¾ cup crumbled feta cheese
  • 1 (0.5-oz) pkg fresh dill, chopped
  • ¾ cup green goddess dressing

Instructions

  1. Combine asparagus, peas, and water in a microwave-safe dish. Cover with plastic wrap, venting one corner. Microwave at HIGH 3 minutes or until asparagus is crisp-tender and peas are thoroughly heated.
  2. Divide greens among plates; top with asparagus mixture, prosciutto, eggs, avocado, onion, cheese, and dill. Serve with dressing.

Side Dish Ingredients

  • 3 navel oranges
  • 1 (16-oz) pkg strawberries, halved
  • 1 (0.5-oz) pkg fresh basil, chopped
  • 2 Tbsp honey

Side Dish Instructions

  1. Peel and section oranges over a large bowl. Add remaining ingredients, and gently toss.
