Ingredients

  • 2 cups panko breadcrumbs
  • 2 tsp garlic powder
  • 1½ tsp dried crushed rosemary
  • ½ tsp salt
  • ½ cup all purpose flour
  • 3 large eggs
  • 1½ lb peeled and deveined, large raw shrimp

Instructions

  1. Preheat oven to 400°F. Coat a large rimmed baking sheet with cooking spray; place a cooling rack over pan.
  2. Combine breadcrumbs, garlic powder, rosemary, and salt in a shallow bowl. Place flour in a second bowl. Beat eggs lightly in a third bowl.
  3. Dip shrimp in flour, and then in egg mixture, letting excess drip off. Dredge shrimp in breadcrumb mixture, pressing gently to adhere. Place coated shrimp on prepared baking sheet. Coat shrimp with cooking spray.
  4. Bake 12 to 15 minutes or until shrimp are done.

  • 1½ cups orzo
  • ⅔ cup mayonnaise
  • 3 Tbsp white balsamic vinegar
  • 3 Tbsp minced garlic
  • ½ tsp salt
  • ½ tsp pepper
  • 1 (5-oz) pkg baby spinach

Side Dish Instructions

  1. Cook orzo according to package directions.
  2. Meanwhile, stir together mayonnaise, vinegar, garlic, salt, and pepper in a large bowl. Add spinach and orzo, tossing to coat and until spinach wilts.
