Apricot-Basil Bellini
Ingredients
- ¼ cup granulated sugar
- ⅓ cup water
- ½ (0.5-oz) pkg fresh basil
- 2 cups sliced apricots
- ½ cup lemon flavored sparkling water, chilled
- 1 (750-ml) bottle Prosecco, chilled
- Garnish: apricot slices
Instructions
- Bring sugar, water, and basil to a boil in a small saucepan over medium heat, stirring until sugar has dissolved. Reduce heat, and simmer 5 minutes.
- Remove from heat, and cool to room temperature, about 10 minutes. Discard basil. Makes ⅓ cup basil syrup.
- Process apricots, basil syrup, and sparkling water in a blender until smooth. Strain with a fine-mesh sieve. Makes 1⅔ cups. Chill at least 1 hour.
- Divide apricot mixture among 8 champagne flutes. Top with Prosecco. Garnish, if desired.
