Apricot-Basil Bellini

Ingredients

  • ¼ cup granulated sugar
  • ⅓ cup water
  • ½ (0.5-oz) pkg fresh basil
  • 2 cups sliced apricots
  • ½ cup lemon flavored sparkling water, chilled
  • 1 (750-ml) bottle Prosecco, chilled
  • Garnish: apricot slices

Instructions

  1. Bring sugar, water, and basil to a boil in a small saucepan over medium heat, stirring until sugar has dissolved. Reduce heat, and simmer 5 minutes.
  2. Remove from heat, and cool to room temperature, about 10 minutes. Discard basil. Makes ⅓ cup basil syrup.
  3. Process apricots, basil syrup, and sparkling water in a blender until smooth. Strain with a fine-mesh sieve. Makes 1⅔ cups. Chill at least 1 hour.
  4. Divide apricot mixture among 8 champagne flutes. Top with Prosecco. Garnish, if desired.
