Blackened Fish with Lemon-Butter Sauce
Creamy Spinach-Parmesan Grits
Ingredients
- 2 lb tilapia fillets
- 2 Tbsp blackened seasoning
- 3 Tbsp olive oil
- ½ cup white wine
- ¼ cup lemon juice
- ¼ cup heavy cream
- 3 Tbsp cold butter, cut into cubes
- ½ tsp dried thyme
Instructions
- Sprinkle fish with seasoning. Cook fish in hot oil in a large nonstick skillet over medium-high heat 4 minutes per side or until fish flakes with a fork. Remove from skillet, and keep warm; wipe skillet clean.
- Add wine and lemon juice to skillet; cook over medium-high heat until reduced by half. Add cream, and cook 3 minutes or until sauce is slightly thickened. Remove from heat, and whisk in cold butter until melted. Stir in thyme.
- Divide fish among 6 plates; spoon sauce over fish.

- 1 cup quick cooking grits
- 2½ cups spinach
- ½ cup shredded Parmesan cheese
- 4 Tbsp butter
- ½ tsp salt
- ½ tsp pepper
Side Dish Instructions
- Cook grits according to package directions. Add spinach, cheese, butter, salt, and pepper; stir until spinach wilts and butter melts.
