Pork Chop Bites

Parmesan-Pepper Mashed Potatoes and Roasted Green Beans

Ingredients

  • ¾ lb boneless pork chops, cubed
  • ½ Tbsp Cajun seasoning
  • 1 Tbsp olive oil
  • 2 Tbsp butter
  • ¼ cup less sodium chicken broth
  • 1½ Tbsp lemon juice
  • ½ tsp garlic powder

Instructions

  1. Toss pork with Cajun seasoning. Cook pork in hot oil in a cast iron skillet over medium-high heat unil browned on all sides. Remove from skillet.
  2. Melt butter in skillet, scraping up browned bits. Add broth, lemon juice, and garlic powder; cook 3 minutes. Return pork to skillet, and cook 2 minutes.

Side Dish Ingredients

  • 1 (12-oz) pkg green beans
  • 1 Tbsp olive oil
  • 1 (24-oz) carton refrigerated mashed potatoes
  • ½ cup shredded Parmesan cheese
  • ¼ tsp pepper

Side Dish Instructions

  1. Preheat oven to 400°F. Toss together green beans and oil on a rimmed baking sheet; arrange in a single layer.
  2. Bake 15 minutes or until tender and lightly browned; season with salt and pepper, if desired.
  3. Heat potatoes according to package directions. Stir in cheese and pepper until blended.
