So-Easy Barbecue Chicken and Biscuits

Ingredients

  • 1 (6-oz) can refrigerated biscuits
  • 1½ cups shredded rotisserie chicken
  • ½ cup barbecue sauce
  • ¼ cup hamburger dill chips

Instructions

  1. Bake biscuits according to package directions.
  2. Toss together chicken and barbecue sauce in a microwave-safe bowl. Microwave at HIGH until thoroughly heated.
  3. Split biscuits. Serve chicken on biscuits with pickles.

  • 1 Tbsp butter
  • 1 Tbsp all purpose flour
  • 1 cup less sodium chicken broth
  • ½ cup milk
  • 1 cup elbows macaroni
  • ½ cup shredded Cheddar cheese
  • ½ cup shredded Monterey Jack cheese

Side Dish Instructions

  1. Preheat oven to 400°F. Melt butter in an oven-safe skillet over medium heat. Add flour and cook, whisking constantly 2 minutes.
  2. Gradually whisk in broth and milk. Cook 10 minutes, whisking occasionally, until slightly thickened. Stir in uncooked pasta and cheeses; cover tightly with foil.
  3. Bake 25 minutes; uncover and stir well. Bake 15 to 20 minutes longer or until mixture is thickened and pasta is tender.
