Caprese Panini
Chilled Red Grapes
Ingredients
- 4 (1.5-oz) slices whole grain bread
- ½ (8-oz) ball fresh mozzarella cheese, sliced
- 1 Roma tomato, sliced
- ½ cup fresh basil leaves
- 1 Tbsp balsamic glaze
- ⅛ tsp kosher salt
- ⅛ tsp pepper
Instructions
- Top 2 bread slices with cheese, tomatoes, and basil; drizzle with glaze, and sprinkle with salt and pepper. Cover with remaining 2 bread slices. Lightly coat outsides of sandwiches with cooking spray.
- Cook sandwiches, in batches if necessary, in a large skillet (or a panini press) over medium heat, pressing sandwiches down using a heavy skillet, 2 to 3 minutes per side or until toasted.

- 1 cup seedless red grapes, chilled

- Serve grapes with sandwiches.
