Caprese Panini

Ingredients

  • 4 (1.5-oz) slices whole grain bread
  • ½ (8-oz) ball fresh mozzarella cheese, sliced
  • 1 Roma tomato, sliced
  • ½ cup fresh basil leaves
  • 1 Tbsp balsamic glaze
  • ⅛ tsp kosher salt
  • ⅛ tsp pepper

Instructions

  1. Top 2 bread slices with cheese, tomatoes, and basil; drizzle with glaze, and sprinkle with salt and pepper. Cover with remaining 2 bread slices. Lightly coat outsides of sandwiches with cooking spray.
  2. Cook sandwiches, in batches if necessary, in a large skillet (or a panini press) over medium heat, pressing sandwiches down using a heavy skillet, 2 to 3 minutes per side or until toasted.

Side Dish Ingredients

  • 1 cup seedless red grapes, chilled

Side Dish Instructions

  1. Serve grapes with sandwiches.
