Roasted Summer Vegetable Couscous

Ingredients
- 2 zucchini, chopped
- 2 yellow squash, chopped
- 1 pint grape tomatoes
- 3 Tbsp olive oil
- ½ tsp salt
- ½ tsp pepper
- 1½ cups Israeli couscous
- 1½ cups crumbled feta cheese
- 1 cup sliced almonds
- 1 cup lemon vinaigrette
- ½ cup chopped fresh parsley
Instructions
- Preheat oven to 450°F. Toss together zucchini, squash, tomatoes, oil, salt, and pepper on a large rimmed baking sheet; spread in a single layer. Roast 15 to 20 minutes or until lightly browned and tender.
- Meanwhile, cook couscous according to package directions.
- Toss together couscous, vegetables, cheese, nuts, vinaigrette, and, if desired, parsley in a large bowl.
