Grilled Chicken Cordon Bleu
Mashed Potatoes and Steamed Broccoli

Ingredients
- 1½ lb boneless, skinless chicken breasts
- 1 Tbsp olive oil
- ½ tsp pepper
- ¼ tsp salt
- 3 Tbsp honey mustard
- ⅓ lb thin sliced low sodium honey ham
- 6 slices reduced fat Swiss cheese
Instructions
- Preheat grill or grill pan to medium-high heat.
- Pound chicken to an even thickness between plastic wrap using a meat mallet. Brush with oil; sprinkle with pepper and salt.
- Grill chicken, covered, 5 to 6 minutes per side or until done.
- Brush chicken with honey mustard. Top with ham slices and cheese. Cook, covered, 2 minutes or until cheese melts.

- 1 (24-oz) pkg refrigerated mashed potatoes
- 2 (12-oz) pkg frozen broccoli florets
- 2 Tbsp butter
- ½ tsp pepper
Side Dish Instructions
- Heat potatoes according to package directions.
- Steam broccoli according to package directions; toss with butter and pepper.
