Ingredients

  • 1½ lb boneless, skinless chicken breasts
  • 1 Tbsp olive oil
  • ½ tsp pepper
  • ¼ tsp salt
  • 3 Tbsp honey mustard
  • ⅓ lb thin sliced low sodium honey ham
  • 6 slices reduced fat Swiss cheese

Instructions

  1. Preheat grill or grill pan to medium-high heat.
  2. Pound chicken to an even thickness between plastic wrap using a meat mallet. Brush with oil; sprinkle with pepper and salt.
  3. Grill chicken, covered, 5 to 6 minutes per side or until done.
  4. Brush chicken with honey mustard. Top with ham slices and cheese. Cook, covered, 2 minutes or until cheese melts.

Side Dish Ingredients

  • 1 (24-oz) pkg refrigerated mashed potatoes
  • 2 (12-oz) pkg frozen broccoli florets
  • 2 Tbsp butter
  • ½ tsp pepper

Side Dish Instructions

  1. Heat potatoes according to package directions.
  2. Steam broccoli according to package directions; toss with butter and pepper.
