Maple-Glazed Sweet Potato Chips

Ingredients
- 4 slices uncured bacon
- 2 (6-oz) boneless, skinless chicken breasts
- ¼ tsp pepper
- 1½ Tbsp honey
- 1½ Tbsp whole grain Dijon mustard
- 2 hamburger buns
- 2 (1-oz) slices fontina cheese
- 2 green leaf lettuce leaves
- 1 tomato, sliced
- ½ avocado, sliced
Instructions
- Cook bacon in a large skillet over medium-high heat 6 minutes or until crisp; drain, reserving drippings in skillet.
- Pound chicken to an even thickness in a zip-top plastic bag using the heel of your hand or a meat mallet. Sprinkle with pepper.
- Cook chicken in hot drippings in same skillet over medium-high heat 5 to 6 minutes per side or until done; set aside.
- Whisk honey and mustard in a small bowl. Spread on buns. Serve chicken on buns with cheese, bacon, lettuce, tomato, and avocado.
Side Dish Ingredients
- 1 large organic sweet potato
- 1 Tbsp olive oil
- 1 Tbsp pure maple syrup
- ⅛ tsp salt
- ⅛ tsp pepper
Side Dish Instructions
- Preheat oven to 400°F. Using a mandoline or a sharp knife, thinly sliced potato.
- Toss together potato, oil, and maple syrup on a rimmed baking sheet; arrange in a single layer on pan. Sprinkle with salt and pepper.
- Bake 25 to 35 minutes or until edges are browned and potatoes are crisp. Cool "chips" on wire racks.
