Ingredients

  • 4 slices uncured bacon
  • 2 (6-oz) boneless, skinless chicken breasts
  • ¼ tsp pepper
  • 1½ Tbsp honey
  • 1½ Tbsp whole grain Dijon mustard
  • 2 hamburger buns
  • 2 (1-oz) slices fontina cheese
  • 2 green leaf lettuce leaves
  • 1 tomato, sliced
  • ½ avocado, sliced

Instructions

  1. Cook bacon in a large skillet over medium-high heat 6 minutes or until crisp; drain, reserving drippings in skillet.
  2. Pound chicken to an even thickness in a zip-top plastic bag using the heel of your hand or a meat mallet. Sprinkle with pepper.
  3. Cook chicken in hot drippings in same skillet over medium-high heat 5 to 6 minutes per side or until done; set aside.
  4. Whisk honey and mustard in a small bowl. Spread on buns. Serve chicken on buns with cheese, bacon, lettuce, tomato, and avocado.

  • 1 large organic sweet potato
  • 1 Tbsp olive oil
  • 1 Tbsp pure maple syrup
  • ⅛ tsp salt
  • ⅛ tsp pepper

Side Dish Instructions

  1. Preheat oven to 400°F. Using a mandoline or a sharp knife, thinly sliced potato.
  2. Toss together potato, oil, and maple syrup on a rimmed baking sheet; arrange in a single layer on pan. Sprinkle with salt and pepper.
  3. Bake 25 to 35 minutes or until edges are browned and potatoes are crisp. Cool "chips" on wire racks.
