Grilled Steak Fajita Salad
Ingredients
- 2 lb skirt steak
- 2 Tbsp Southwest seasoning
- 1 (20-oz) bag frozen peppers and onion blend
- 4 Roma tomatoes, cut into wedges
- 2 (10-oz) pkg chopped romaine lettuce
- ¾ cup chipotle Ranch dressing
Instructions
- Preheat grill or grill pan to medium-high heat. Rub steak with seasoning. Grill steak on lightly greased grill grate 5 minutes per side or to desired doneness; let stand 5 minutes before thinly slicing across the grain.
- Cook peppers and onion blend in a large nonstick skillet sprayed with cooking spray over medium-high heat 5 minutes or until crisp-tender. Add tomatoes; cook 3 minutes.
- Divide lettuce among 6 plates. Top with steak and peppers mixture. Drizzle with dressing.
