One-Pot Parmesan Shrimp and Orzo

Ingredients
- 1½ lb peeled and deveined, large raw shrimp
- ¼ tsp kosher salt
- ¼ tsp pepper
- 2 Tbsp olive oil, divided
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 (16-oz) pkg orzo
- 2 cups whole milk
- 2 cups less sodium chicken broth
- 1 (5-oz) pkg baby spinach
- 1 (12-oz) jar roasted red peppers, drained and chopped
- ½ cup freshly grated Parmesan cheese
Instructions
- Sprinkle shrimp with salt and pepper. Cook in 1 Tbsp hot oil in a Dutch oven or large deep skillet over medium-high heat 3 to 4 minutes until shrimp are done. Remove from pot.
- Sauté onion in 1 Tbsp hot oil in pot 1 to 2 minutes or until tender. Add garlic and orzo; sauté 1 to 2 minutes. Stir in milk and broth; bring to a boil. Reduce heat to low; cover and cook 10 minutes or until orzo is al dente and most of liquid is absorbed, stirring occasionally.
- Stir in spinach, roasted peppers, and cheese until spinach wilts and cheese melts.
