One-Pot Parmesan Shrimp and Orzo

Ingredients

  • 1½ lb peeled and deveined, large raw shrimp
  • ¼ tsp kosher salt
  • ¼ tsp pepper
  • 2 Tbsp olive oil, divided
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 (16-oz) pkg orzo
  • 2 cups whole milk
  • 2 cups less sodium chicken broth
  • 1 (5-oz) pkg baby spinach
  • 1 (12-oz) jar roasted red peppers, drained and chopped
  • ½ cup freshly grated Parmesan cheese

Instructions

  1. Sprinkle shrimp with salt and pepper. Cook in 1 Tbsp hot oil in a Dutch oven or large deep skillet over medium-high heat 3 to 4 minutes until shrimp are done. Remove from pot.
  2. Sauté onion in 1 Tbsp hot oil in pot 1 to 2 minutes or until tender. Add garlic and orzo; sauté 1 to 2 minutes. Stir in milk and broth; bring to a boil. Reduce heat to low; cover and cook 10 minutes or until orzo is al dente and most of liquid is absorbed, stirring occasionally.
  3. Stir in spinach, roasted peppers, and cheese until spinach wilts and cheese melts.
