Fragrant Couscous with Chicken
Pita Chips and Hummus
Ingredients
- 1½ cups Israeli couscous
- ¼ cup golden raisins
- Dash of ground cinnamon
- 1 cup chopped onion
- 1 Tbsp olive oil
- 3 cups chopped rotisserie chicken
- ⅓ cup chopped fresh parsley
- ⅓ cup refrigerated lemon vinaigrette
- 2 (5-oz) pkg baby arugula
Instructions
- Cook couscous according to package directions, adding raisins during last 2 minutes of cooking. Stir in cinnamon.
- Sauté onion in hot oil in a large skillet over medium-high heat 4 to 5 minutes or until golden. Add chicken; cook 1 minute or until thoroughly heated.
- Toss together couscous, chicken mixture, parsley, and vinaigrette. Serve over arugula.

- 1 (7.33-oz) pkg multigrain pita chips
- 1 (10-oz) container lemon garlic hummus
Side Dish Instructions
- Serve pita chips with hummus for dipping.
