Fragrant Couscous with Chicken

Ingredients

  • 1½ cups Israeli couscous
  • ¼ cup golden raisins
  • Dash of ground cinnamon
  • 1 cup chopped onion
  • 1 Tbsp olive oil
  • 3 cups chopped rotisserie chicken
  • ⅓ cup chopped fresh parsley
  • ⅓ cup refrigerated lemon vinaigrette
  • 2 (5-oz) pkg baby arugula

Instructions

  1. Cook couscous according to package directions, adding raisins during last 2 minutes of cooking. Stir in cinnamon.
  2. Sauté onion in hot oil in a large skillet over medium-high heat 4 to 5 minutes or until golden. Add chicken; cook 1 minute or until thoroughly heated.
  3. Toss together couscous, chicken mixture, parsley, and vinaigrette. Serve over arugula.

Side Dish Ingredients

  • 1 (7.33-oz) pkg multigrain pita chips
  • 1 (10-oz) container lemon garlic hummus

Side Dish Instructions

  1. Serve pita chips with hummus for dipping.
