Ingredients

  • 1½ lb boneless pork chops
  • ½ tsp salt
  • ½ tsp pepper
  • ¾ cup pesto
  • 2 Roma tomatoes, thinly sliced
  • 1 cup grated Parmesan cheese

Instructions

  1. Preheat oven to 400°F. Place pork on a large rimmed baking sheet; sprinkle with salt and pepper. Top pork with pesto, tomato slices, and cheese.
  2. Bake 20 to 25 minutes, depending upon thickness of pork chops, or until a thermometer inserted in thickest portion reads 145°F.
