Parmesan Pesto Pork Chops

Ingredients
- 1½ lb boneless pork chops
- ½ tsp salt
- ½ tsp pepper
- ¾ cup pesto
- 2 Roma tomatoes, thinly sliced
- 1 cup grated Parmesan cheese
Instructions
- Preheat oven to 400°F. Place pork on a large rimmed baking sheet; sprinkle with salt and pepper. Top pork with pesto, tomato slices, and cheese.
- Bake 20 to 25 minutes, depending upon thickness of pork chops, or until a thermometer inserted in thickest portion reads 145°F.

- 2 Tbsp olive oil
- ½ tsp salt
- ½ tsp pepper
- 2 cloves garlic, minced

- Bake 20 minutes or until vegetables are browned and tender.
