Surf-and-Turf Bowl
Garlicky Cauli-Rice
Ingredients
- 2 lb beef flank steak
- 1 lb peeled and deveined, large raw shrimp
- ½ red onion, sliced
- 2 (6-oz) pkg sliced portobello mushrooms
- 1 large yellow squash, thinly sliced
- 1 (12-oz) pkg broccoli florets
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 4 cloves garlic, minced
- 2 Tbsp coconut aminos
- 1 tsp crushed red pepper
- ½ cup walnuts, chopped
Instructions
- Season beef with salt and pepper, if desired. Cook beef in large skillet coated in cooking spray, over medium-high heat 6-7 minutes per side or to desired doneness. Remove from skillet. Let stand 10 minutes before slicing.
- Season shrimp with salt and pepper, if desired. Cook shrimp in the same skillet coated with cooking spray, over medium high heat 3 to 5 minutes or until done. Remove from skillet.
- Add onion, mushroom, squash, broccoli, bell peppers, garlic, and coconut aminos to skillet; cover, reduce heat to medium and cook for 3 to 5 minutes or until softened.
- Divide beef, shrimp and vegetable mixture among 6 plates. Top with crushed red peppers and nuts. Serve over Garlicky Cauli Rice recipe.
Side Dish Ingredients
- 2 (10-oz) pkg frozen cauliflower rice
- 1 Tbsp ghee
- 2 cloves garlic, minced
- ½ tsp salt
- ½ tsp pepper
Side Dish Instructions
- Microwave cauliflower rice according to package directions. Stir in ghee and garlic; sprinkle with salt and pepper.
