Ingredients

  • 2 lb boneless, skinless chicken thighs
  • ¾ tsp salt, divided
  • ¾ tsp pepper, divided
  • 3 Tbsp olive oil, divided
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 lime
  • ½ cup heavy cream
  • ½ cup less sodium chicken broth
  • 2 tsp ground turmeric

Instructions

  1. Sprinkle chicken with ¼ tsp each salt and pepper. Cook chicken in 2 Tbsp hot oil in a large skillet over medium-high heat 5 minutes per side or until done. Remove from skillet.
  2. Cook onion and garlic in 1 Tbsp hot oil in same skillet over medium-high heat 3 minutes.
  3. Grate zest and squeeze juice from lime. Add lime zest, lime juice, cream, broth, turmeric, and ½ tsp salt and pepper to skillet; return chicken to skillet, and cook 6 to 8 minutes or until sauce is thickened.

Side Dish Ingredients

  • 3 (3.5-oz) pouches boil in bag jasmine rice
  • ½ cup chopped fresh cilantro
  • 2 (12-oz) pkg broccoli florets
  • 1½ tsp ground turmeric
  • ½ tsp salt
  • ½ tsp pepper

Side Dish Instructions

  1. Cook rice according to package directions. Stir in cilantro.
  2. Meanwhile, cook broccoli according to package directions. Toss with turmeric, salt, and pepper.
