Turmeric-Lime Chicken
Cilantro Rice and Broccoli

Ingredients
- 2 lb boneless, skinless chicken thighs
- ¾ tsp salt, divided
- ¾ tsp pepper, divided
- 3 Tbsp olive oil, divided
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 lime
- ½ cup heavy cream
- ½ cup less sodium chicken broth
- 2 tsp ground turmeric
Instructions
- Sprinkle chicken with ¼ tsp each salt and pepper. Cook chicken in 2 Tbsp hot oil in a large skillet over medium-high heat 5 minutes per side or until done. Remove from skillet.
- Cook onion and garlic in 1 Tbsp hot oil in same skillet over medium-high heat 3 minutes.
- Grate zest and squeeze juice from lime. Add lime zest, lime juice, cream, broth, turmeric, and ½ tsp salt and pepper to skillet; return chicken to skillet, and cook 6 to 8 minutes or until sauce is thickened.
Side Dish Ingredients
- 3 (3.5-oz) pouches boil in bag jasmine rice
- ½ cup chopped fresh cilantro
- 2 (12-oz) pkg broccoli florets
- 1½ tsp ground turmeric
- ½ tsp salt
- ½ tsp pepper
Side Dish Instructions
- Cook rice according to package directions. Stir in cilantro.
- Meanwhile, cook broccoli according to package directions. Toss with turmeric, salt, and pepper.
