Creamy French Onion Chicken

Ingredients

  • 2 lb boneless, skinless chicken breasts
  • 3 Tbsp butter
  • 1 cup French onion dip
  • 1 cup chicken broth

Instructions

  1. Cut chicken in half crosswise and pound to an even thickness between plastic wrap using a meat mallet.
  2. Melt butter in a large nonstick skillet over medium heat. Add chicken, and cook 5 to 6 minutes per side or until done. Remove from skillet, and keep warm.
  3. Add dip and broth to skillet; cook, stirring occasionally until thickened and bubbly. Divide chicken among 6 plates. Spoon sauce over chicken.

  • ¼ cup butter
  • 1½ cups long grain white rice
  • 3 cups chicken broth
  • 2 (8-oz) pkg thin green beans
  • 2 Tbsp olive oil

Side Dish Instructions

  1. Preheat oven to 400°F. Melt butter in a large saucepan over medium-high heat. Add rice; cook, stirring, 1 minute. Add broth; bring to a boil, cover, reduce heat, and simmer 18 to 20 minutes or until rice is tender.
  2. Meanwhile, toss green beans with oil on a rimmed baking sheet; season with salt and pepper, if desired. Bake 20 minutes or until green beans are browned and tender.
