Asian Barbecue Pork Medallions

Broccoli Stir-Fry and Fried Rice

Ingredients

  • 1 cup ketchup
  • 6 Tbsp honey
  • 4 Tbsp less sodium soy sauce
  • 1 tsp garlic powder
  • 2 (1-lb) pork tenderloins, trimmed

Instructions

  1. Preheat grill or grill pan to medium-high heat.
  2. Combine ketchup, honey, soy sauce, and garlic powder in a bowl.
  3. Cut pork into 1-inch-thick slices. Pound slices to ½-inch thickness between plstic wrap using a meat mallet. Season pork with salt and pepper, if desired.
  4. Grill pork, 3 to 4 minutes per side or until done, basting occasionally with ketchup mixture.

  • 2 (6.2-oz) pkg stir fried rice mix
  • 1 (20-oz) pkg frozen broccoli stir fry
  • 3 Tbsp less sodium soy sauce

Side Dish Instructions

  1. Cook rice according to package directions.
  2. Cook stir-fry according to package directions; stir in soy sauce.
