Dill Roasted Potatoes and Green Beans

Ingredients

  • 1 cup panko breadcrumbs
  • 2 tsp lemon zest
  • 1 tsp garlic powder
  • 6 (6-oz) tilapia fillets
  • 4 Tbsp butter, melted

Instructions

  1. Preheat oven to 425°F. Stir together breadcrumbs, lemon zest, and garlic powder in a shallow dish. Season fish with salt and pepper, if desired.
  2. Spoon melted butter into a second shallow dish. Dip fish in butter; dredge in breadcrumb mixture to coat. Place fish in a single layer on a lightly greased wire rack over a baking sheet.
  3. Bake 10 to 15 minutes or until fish flakes with a fork.

  • 1½ lb red potatoes, halved
  • 2 Tbsp olive oil
  • 2 Tbsp chopped fresh dill
  • ½ tsp salt, divided
  • ¼ tsp pepper
  • 2 (12-oz) pkg green beans

Side Dish Instructions

  1. Preheat oven to 425°F. Toss together potatoes, oil, dill, ¼ tsp salt, and pepper on a large lightly greased rimmed baking sheet; spread in a single layer.
  2. Bake 25 minutes or until potatoes are browned and tender.
  3. Meanwhile, cook beans according to package directions. Sprinkle with ¼ tsp salt.
