Ingredients

  • 2 Tbsp Mizkan® Udon and Soba Broth Concentrate
  • 1 cup hot water
  • ¼ cup soy sauce
  • ¼ cup Mizkan® Mirin
  • 1 Tbsp sugar
  • 2 (8.8-oz) pkg soba noodles
  • 4 green onions, thinly sliced
  • 3 sheets dried seaweed, thinly sliced
  • 2 tsp wasabi

Instructions

  1. Combine broth concentrate, water, soy sauce, mirin, and sugar in a small saucepan. Bring to a boil over medium-high heat, stirring until sugar is dissolved. Let cool, cover, and refrigerate up to 3 days.
  2. Meanwhile, cook noodles according to package directions; rinse with cold water to remove excess starch. Place noodes in a bowl of ice water; let stand 30 seconds. Drain well.
  3. Serve noodles with chilled broth mixture for dipping. Top with onions, seaweed, and wasabi, if desired.
