Sesame Noodle Bento Box
Ingredients
- ¼ cup tahini
- ¼ cup warm water
- 3 Tbsp soy sauce
- 3 Tbsp sesame oil, divided
- 1 Tbsp Mizkan® Seasoned Rice Vinegar
- 1 tsp garlic powder
- 1 tsp Sriracha
- ½ (14-oz) box stir fry rice noodles
- 1½ lb boneless, skinless chicken breasts, cubed
- 2 cups frozen shelled edamame
- 1 English cucumber, chopped
- 1 cup shredded carrot
- 1 Tbsp black sesame seeds
Instructions
- Whisk together tahini, water, soy sauce, 1 Tbsp sesame oil, vinegar, garlic powder, and Sriracha in a large bowl.
- Meanwhile, cook pasta according to package directions; drain. Add to bowl with tahini mixture; toss.
- Season chicken with salt and pepper, if desired. Cook chicken in 2 Tbsp hot sesame oil in a large skillet over medium heat until browned and done. Cool slightly.
- Cook edamame according to package directions.
- Divide chicken, edamame, cucumber, carrot, and noodles among 4 boxes. Sprinkle with sesame seeds.
