Sesame Noodle Bento Box

Ingredients

  • ¼ cup tahini 
  • ¼ cup warm water
  • 3 Tbsp soy sauce
  • 3 Tbsp sesame oil, divided
  • 1 Tbsp Mizkan® Seasoned Rice Vinegar
  • 1 tsp garlic powder
  • 1 tsp Sriracha
  • ½ (14-oz) box stir fry rice noodles
  • 1½ lb boneless, skinless chicken breasts, cubed
  • 2 cups frozen shelled edamame
  • 1 English cucumber, chopped
  • 1 cup shredded carrot
  • 1 Tbsp black sesame seeds

Instructions

  1. Whisk together tahini, water, soy sauce, 1 Tbsp sesame oil, vinegar, garlic powder, and Sriracha in a large bowl.
  2. Meanwhile, cook pasta according to package directions; drain. Add to bowl with tahini mixture; toss.
  3. Season chicken with salt and pepper, if desired. Cook chicken in 2 Tbsp hot sesame oil in a large skillet over medium heat until browned and done. Cool slightly.
  4. Cook edamame according to package directions.
  5. Divide chicken, edamame, cucumber, carrot, and noodles among 4 boxes. Sprinkle with sesame seeds.
