Grilled Smoked Gouda Burgers

Ingredients

  • 2 lb ground beef
  • 2 Tbsp Worcestershire sauce, divided
  • 2 Tbsp olive oil
  • 1 onion, cut into ¼ inch thick slices
  • 1 cup shredded smoked Gouda cheese

Instructions

  1. Preheat grill to medium-high heat. Gently combine beef and 1 Tbsp Worcestershire. Shape into 6 patties. Season with salt and pepper, if desired.
  2. Combine 1 Tbsp Worcestershire sauce and oil. Brush onion with Worcestershire mixture.
  3. Grill burgers, covered, 4 to 5 minutes per side or until centers are no longer pink, topping with cheese during last 1 minute of cooking. Grill onions 2 minutes per side or until charred. Serve onions on burgers.

Side Dish Ingredients

  • 1 lb yellow squash, cut into planks
  • 2 tsp minced garlic
  • 2 Tbsp olive oil, divided
  • 2 tsp lemon juice
  • ¼ tsp salt
  • ½ tsp pepper
  • 1 (5-oz) pkg mixed greens
  • ¼ cup freshly grated Parmesan cheese

Side Dish Instructions

  1. Preheat grill to medium-high heat. Combine squash, garlic, and ½ Tbsp oil; place on a grill rack. Grill, covered, 2 to 3 minutes per side or until squash is well marked on both sides. Coarsely chop.
  2. Meanwhile, whisk together 1½ Tbsp oil, lemon juice, salt, and pepper.
  3. Gently combine greens, squash, and oil mixture in a large bowl; sprinkle with cheese.
