Ingredients

  • 12 hard cooked eggs
  • ¾ cup mayonnaise
  • ½ cup finely shredded pepper Jack cheese
  • 2 Tbsp chopped pickled jalapeño peppers
  • 1 Tbsp chopped fresh cilantro
  • 1 Tbsp Dijon mustard
  • ½ tsp ground cumin
  • ¼ tsp salt

Instructions

  1. Cut eggs in half lengthwise. Remove egg yolks and place in a small bowl; mash until smooth. Stir in mayonnaise, cheese, peppers, cilantro, mustard, cumin, and salt.
  2. Spoon egg yolk mixture into egg whites. Serve immediately, or refrigerate up to 1 day.
