Buffalo Meatball Subs

Ingredients

  • 1½ lb ground chicken
  • 1 cup panko breadcrumbs
  • 1 (1-oz) envelop Ranch dressing mix
  • 1 large egg, lightly beaten
  • 1¼ cups buffalo sauce
  • 6 sub rolls, split and toasted
  • 1 cup Ranch dressing

Instructions

  1. Preheat oven to 425°F. Gently mix together chicken, breadcrumbs, Ranch mix, and egg in a large bowl using your hands.
  2. Roll chicken into 1½-inch balls. Place on 2 large greased rimmed baking sheets. Bake 15 minutes or until meatballs are no longer pink in center, shaking pans after 5 minutes. Toss meatballs in buffalo sauce.
  3. Divide meatballs among buns. Serve or drizzle with Ranch dressing.

  • ½ cup olive oil vinaigrette
