Buffalo Meatball Subs
Spinach SaladIngredients
- 1½ lb ground chicken
- 1 cup panko breadcrumbs
- 1 (1-oz) envelop Ranch dressing mix
- 1 large egg, lightly beaten
- 1¼ cups buffalo sauce
- 6 sub rolls, split and toasted
- 1 cup Ranch dressing
Instructions
- Preheat oven to 425°F. Gently mix together chicken, breadcrumbs, Ranch mix, and egg in a large bowl using your hands.
- Roll chicken into 1½-inch balls. Place on 2 large greased rimmed baking sheets. Bake 15 minutes or until meatballs are no longer pink in center, shaking pans after 5 minutes. Toss meatballs in buffalo sauce.
- Divide meatballs among buns. Serve or drizzle with Ranch dressing.
