Grilled Chicken with Hoisin-Ginger Sauce

Ingredients
- ⅓ cup sweet and sour sauce
- ¼ cup water
- 3 Tbsp hoisin sauce
- ¼ tsp ground ginger
- ¼ tsp hot sauce
- 2 cloves garlic, minced
- 1½ lb boneless, skinless chicken breasts
Instructions
- Stir together sweet and sour sauce, water, hoisin sauce, ginger, hot sauce, and garlic in a saucepan; bring to a boil over medium heat, stirring often. Reduce heat, and simmer 3 minutes, stirring often.
- Preheat grill or grill pan to medium heat. Cut chicken in half crosswise, and pound to an even thickness between plastic wrap using a meat mallet.
- Grill chicken, covered, 12 to 15 minutes or until done, brushing with sauce during last 5 minutes.
- Slice chicken, and serve over hot cooked rice.

- 1½ cups long grain white rice
- 1 (12-oz) pkg frozen snow peas
- ½ tsp salt
- ½ tsp pepper
Side Dish Instructions
- Cook rice according to package directions.
- Steam snow peas according to package directions; sprinkle with salt and pepper.
