Skillet Cheesy Shells and Beef

Ingredients

  • 12 oz shell pasta
  • 1½ lb ground beef
  • 1 cup chopped onion
  • 2 Tbsp all purpose flour
  • 1 Tbsp Italian seasoning
  • 2 cups less sodium beef broth
  • 1 (15-oz) can tomato sauce
  • ½ tsp salt
  • ½ tsp pepper
  • 1 (8-oz) carton sour cream
  • 1 (8-oz) block mozzarella cheese, shredded

Instructions

  1. Cook pasta according to package directions; drain.
  2. Meanwhile, cook beef and onion in a large skillet over medium heat until beef is browned and crumbly; drain and return to skillet.
  3. Add flour and seasoning; cook, stirring constantly, 2 minutes. Gradually add broth, tomato sauce, salt, and pepper; bring to a boil, reduce heat, and simmer 5 minutes or until mixture is thickened. Stir in pasta, sour cream, and cheese until cheese melts.

Side Dish Ingredients

  • 1 (16-oz) pkg mixed greens
  • 1 pint grape tomatoes, halved
  • ½ cup olive oil vinaigrette

Side Dish Instructions

  1. Toss together all ingredients in a large bowl.
