Marinara Poached Chicken over Pasta

Ingredients

  • 12 oz angel hair pasta
  • 1 (24-oz) jar marinara sauce
  • 1 cup chicken broth
  • 2 tsp Italian seasoning
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 2 lb boneless, skinless chicken breasts
  • ¾ cup shredded Parmesan cheese

Instructions

  1. Cook pasta according to package directions; drain and keep warm.
  2. Meanwhile, combine marinara sauce, broth, seasoning, onion powder, and garlic powder in a large, deep skillet; bring to a boil, reduce heat, and simmer.
  3. Cut chicken into bite-size pieces; add to skillet, cover, and simmer 10 minutes or until chicken is done. Add pasta; toss, and sprinkle with cheese.

  • ¼ cup butter, softened
  • 1 (16-oz) loaf French bread, cut into 1-inch-thick slices
  • 1 (6-oz) pkg shredded Parmesan cheese

Side Dish Instructions

  1. Preheat oven to 425°F. Spread butter over bread slices. Sprinkle with cheese. Place on a baking sheet and bake 15 minutes or until bread is toasted and cheese is melted.
