Ingredients
- 1 (6-oz) pkg long grain and wild rice mix
- 2 (10.5-oz) cans cream of mushroom soup
- 1¼ cups water
- 2¼ lb boneless, skinless chicken breasts
- 1 (1-oz) envelope onion soup mix
Instructions
- Preheat oven to 350°F. Stir together rice mix, soup, and water in a lightly greased 13- x 9-inch baking dish. Nestle chicken in rice mixture; sprinkle onion soup mix over chicken.
- Cover tightly, and bake 1 hour or until rice is tender and chicken is done. Serve half, and reserve remaining half for another meal.
Side Dish Ingredients
- 3 cups chopped romaine lettuce
- 1 cup halved grape tomatoes
- 3 Tbsp grated Parmesan cheese
- 3 Tbsp lemon vinaigrette
Side Dish Instructions
- Toss together all ingredients in a medium bowl just before serving.
