Ingredients

  • 6 slices bacon
  • 3 burrito size, low carb, whole wheat tortillas
  • ¼ lb deli sliced less sodium turkey
  • ¼ lb deli sliced less sodium ham
  • 1 cup shredded Cheddar Jack cheese
  • 1½ Tbsp butter
  • 6 Tbsp Ranch dressing

Instructions

  1. Cook bacon in a large skillet over medium heat 6 to 8 minutes or until crisp; drain on paper towels.
  2. Top one side of each tortilla with bacon, turkey, ham, and cheese. Fold tortillas in half.
  3. Melt 1 Tbsp butter in a large nonstick skillet over medium heat; add 2 quesadillas to skillet. Cook 4 minutes per side or until golden brown; repeat with remaining ½ Tbsp butter and quesadilla. Serve with Ranch dressing.

  • ½ (16-oz) pkg tricolor coleslaw
  • ½ cup chopped dill pickle chips
  • ¼ cup mayonnaise
  • ½ Tbsp lemon juice
  • ½ tsp honey

Side Dish Instructions

  1. Stir together all ingredients in a medium bowl.
