Southwestern Quinoa Chopped Salad
Ingredients
- 1 (3-oz) boil in bag tricolor quinoa
- 2 (15.5-oz) cans pinto beans, rinsed and drained
- 1 cup frozen corn, thawed
- 2 (10.3-oz) Southwest chopped salad kits
- ¼ cup fresh cilantro leaves
Instructions
- Cook quinoa according to package directions; let cool slightly.
- Toss together quinoa, beans, and corn in a large bowl. Add ingredients from salad kits; toss. Divide salad among 6 plates. Top with cilantro.
