Southwestern Quinoa Chopped Salad

Ingredients

  • 1 (3-oz) boil in bag tricolor quinoa
  • 2 (15.5-oz) cans pinto beans, rinsed and drained
  • 1 cup frozen corn, thawed
  • 2 (10.3-oz) Southwest chopped salad kits
  • ¼ cup fresh cilantro leaves

Instructions

  1. Cook quinoa according to package directions; let cool slightly.
  2. Toss together quinoa, beans, and corn in a large bowl. Add ingredients from salad kits; toss. Divide salad among 6 plates. Top with cilantro.
