Skillet Apple Cobbler

Ingredients

  • ½ cup butter, cubed
  • 1 cup all purpose flour
  • ⅔ cup granulated sugar
  • ⅓ cup packed brown sugar
  • 1½ tsp baking powder
  • 1 tsp apple pie spice
  • 1 tsp ground cinnamon
  • ½ tsp salt
  • 1 cup buttermilk
  • 1 tsp vanilla extract
  • 2 crisp red apples, thinly sliced
  • ¾ cup chopped pecans
  • 2 Tbsp powdered sugar

Instructions

  1. Preheat oven to 350°F. Place butter in a 10-inch cast-iron skillet (or an 11-x 7-inch baking dish). Place skillet in oven until butter is melted.
  2. Whisk together flour, both sugars, baking powder, pie spice, cinnamon, and salt in a bowl; whisk in buttermilk and vanilla.
  3. Pour mixture into skillet over melted butter. Scatter apple slices over batter; sprinkle with pecans.
  4. Bake 35 to 45 minutes or until center is set and edges are golden brown. Sprinkle with powdered sugar.
