Skillet Apple Cobbler

Ingredients
- ½ cup butter, cubed
- 1 cup all purpose flour
- ⅔ cup granulated sugar
- ⅓ cup packed brown sugar
- 1½ tsp baking powder
- 1 tsp apple pie spice
- 1 tsp ground cinnamon
- ½ tsp salt
- 1 cup buttermilk
- 1 tsp vanilla extract
- 2 crisp red apples, thinly sliced
- ¾ cup chopped pecans
- 2 Tbsp powdered sugar
Instructions
- Preheat oven to 350°F. Place butter in a 10-inch cast-iron skillet (or an 11-x 7-inch baking dish). Place skillet in oven until butter is melted.
- Whisk together flour, both sugars, baking powder, pie spice, cinnamon, and salt in a bowl; whisk in buttermilk and vanilla.
- Pour mixture into skillet over melted butter. Scatter apple slices over batter; sprinkle with pecans.
- Bake 35 to 45 minutes or until center is set and edges are golden brown. Sprinkle with powdered sugar.
