Hoisin Soba Noodles with Broccoli

Ingredients

  • 2 (8-oz) pkg soba noodles
  • 1 (12-oz) pkg broccoli florets, coarsely chopped
  • 1 (16-oz) pkg sliced mushrooms
  • 1 Tbsp sesame oil
  • 2 cloves garlic, minced
  • ½ (10-oz) pkg shredded carrots
  • 2 Tbsp vegan hoisin sauce
  • 1½ Tbsp less sodium soy sauce
  • 1 Tbsp natural rice vinegar
  • 1 Tbsp sesame seeds

Instructions

  1. Cook noodles according to package directions, adding broccoli during last 2 minutes of cooking. Drain; rinse with cold water to cool.
  2. Meanwhile, sauté mushrooms in hot oil in a large skillet over medium-high heat 5 minutes. Add garlic; cook 30 seconds or until fragrant.
  3. Add carrots, hoisin sauce, soy sauce, and vinegar; cook 3 to 5 minutes or until thickened, stirring often.
  4. Stir in noodles and broccoli, and cook 2 minutes. Sprinkle with sesame seeds.
