Hoisin Soba Noodles with Broccoli
Ingredients
- 2 (8-oz) pkg soba noodles
- 1 (12-oz) pkg broccoli florets, coarsely chopped
- 1 (16-oz) pkg sliced mushrooms
- 1 Tbsp sesame oil
- 2 cloves garlic, minced
- ½ (10-oz) pkg shredded carrots
- 2 Tbsp vegan hoisin sauce
- 1½ Tbsp less sodium soy sauce
- 1 Tbsp natural rice vinegar
- 1 Tbsp sesame seeds
Instructions
- Cook noodles according to package directions, adding broccoli during last 2 minutes of cooking. Drain; rinse with cold water to cool.
- Meanwhile, sauté mushrooms in hot oil in a large skillet over medium-high heat 5 minutes. Add garlic; cook 30 seconds or until fragrant.
- Add carrots, hoisin sauce, soy sauce, and vinegar; cook 3 to 5 minutes or until thickened, stirring often.
- Stir in noodles and broccoli, and cook 2 minutes. Sprinkle with sesame seeds.
