Ingredients

  • 4 slices bacon
  • ¾ lb boneless, skinless chicken breasts
  • ⅓ cup barbecue sauce
  • 2 slices Cheddar cheese
  • ¼ cup Ranch dip
  • 2 hamburger buns, split

Instructions

  1. Cook bacon in a skillet over medium heat until crisp; drain on paper towels, reserving 1 Tbsp drippings in skillet.
  2. Meanwhile, cut chicken in half crosswise and pound to an even thickness between plastic wrap using a meat mallet; season lightly with salt and pepper, if desired.
  3. Cook chicken in hot drippings in same skillet over medium heat 5 to 6 minutes per side or until done; brush with barbecue sauce and top each with 1 slice cheese. Cover, and let stand 1 minute or until cheese is melted.
  4. Spread Ranch dip over cut sides of buns. Top bottom halves with chicken and bacon; cover with bun tops.

Side Dish Ingredients

  • 6 oz frozen potato tots (18 pieces)
  • 2 Tbsp mayonnaise
  • 2 Tbsp barbecue sauce

Side Dish Instructions

  1. Bake potato tots according to package directions.
  2. Whisk together mayonnaise and barbecue sauce. Serve sauce with tots.
