Barbecue-Ranch Chicken Sandwiches
Potato Tots with Creamy Barbecue Sauce

Ingredients
- 4 slices bacon
- ¾ lb boneless, skinless chicken breasts
- ⅓ cup barbecue sauce
- 2 slices Cheddar cheese
- ¼ cup Ranch dip
- 2 hamburger buns, split
Instructions
- Cook bacon in a skillet over medium heat until crisp; drain on paper towels, reserving 1 Tbsp drippings in skillet.
- Meanwhile, cut chicken in half crosswise and pound to an even thickness between plastic wrap using a meat mallet; season lightly with salt and pepper, if desired.
- Cook chicken in hot drippings in same skillet over medium heat 5 to 6 minutes per side or until done; brush with barbecue sauce and top each with 1 slice cheese. Cover, and let stand 1 minute or until cheese is melted.
- Spread Ranch dip over cut sides of buns. Top bottom halves with chicken and bacon; cover with bun tops.
Side Dish Ingredients
- 6 oz frozen potato tots (18 pieces)
- 2 Tbsp mayonnaise
- 2 Tbsp barbecue sauce
Side Dish Instructions
- Bake potato tots according to package directions.
- Whisk together mayonnaise and barbecue sauce. Serve sauce with tots.
