Oven-Fried Pork Chops

Baked Sweet Potatoes and Peas

Ingredients

  • 2 large eggs
  • 2 Tbsp whole milk
  • 1 (6-oz) pkg herb seasoned stuffing mix, crushed
  • 2 lb boneless pork loin chops

Instructions

  1. Preheat oven to 450ºF; lightly grease a rimmed baking sheet and place in oven while oven preheats.
  2. Whisk together eggs and milk in a shallow dish until blended. Place stuffing mix in a separate shallow dish.
  3. Dip pork chops in egg mixture; dredge in stuffing mix to coat. Carefully remove pan from oven and place pork chops on hot pan. Bake 15 to 20 minutes or until pork is done.

Side Dish Ingredients

  • 6 small sweet potatoes 
  • 8 Tbsp butter, divided
  • 6 Tbsp packed brown sugar
  • 1½ tsp ground cinnamon
  • 2 (10-oz) pkg frozen peas

Side Dish Instructions

  1. Preheat oven to 450°F. Place potatoes on a foil-lined baking sheet. Bake 30 to 40 minutes or until tender.
  2. Cut a lengthwise slit on top of each potato; top each with 1 Tbsp butter, brown sugar, and cinnamon.
  3. Steam peas according to package directions. Toss with 2 Tbsp butter and season with salt and pepper, if desired.
