Oven-Baked Pork Chops with Honey-Mustard Butter
Mashed Sweet Potatoes and Crunchy Lemon Broccoli
Ingredients
- 6 (8-oz) boneless pork loin chops
- 2 Tbsp olive oil
- 6 Tbsp butter, softened
- ¼ cup chopped fresh parsley
- 2½ Tbsp honey mustard
Instructions
- Preheat oven to 425°F. Season pork chops with salt and pepper, if desired. Cook pork in hot oil in a large cast iron skillet over medium-high heat 2 minutes per side or until browned.
- Meanwhile, stir together butter, parsley, and honey mustard; dollop mixture over pork chops.
- Transfer skillet to oven, and bake 10 minutes or until a meat thermometer inserted registers 145°F. Let stand 5 minutes before serving.

- 2 (12-oz) pkg broccoli florets
- ½ cup panko breadcrumbs
- 3 Tbsp olive oil
- 1 tsp lemon pepper seasoning
- 2 (22-oz) pkg refrigerated mashed sweet potatoes
Side Dish Instructions
- Preheat oven to 425°F. Toss together broccoli, breadcrumbs, oil, and lemon-pepper seasoning on a large lightly greased rimmed baking sheet. Bake 15 minutes or until browned and tender.
- Heat potatoes according to package directions.
