Oven-Baked Pork Chops with Honey-Mustard Butter

Ingredients

  • 6 (8-oz) boneless pork loin chops
  • 2 Tbsp olive oil
  • 6 Tbsp butter, softened
  • ¼ cup chopped fresh parsley
  • 2½ Tbsp honey mustard

Instructions

  1. Preheat oven to 425°F. Season pork chops with salt and pepper, if desired. Cook pork in hot oil in a large cast iron skillet over medium-high heat 2 minutes per side or until browned.
  2. Meanwhile, stir together butter, parsley, and honey mustard; dollop mixture over pork chops.
  3. Transfer skillet to oven, and bake 10 minutes or until a meat thermometer inserted registers 145°F. Let stand 5 minutes before serving.

Side Dish Ingredients

  • 2 (12-oz) pkg broccoli florets
  • ½ cup panko breadcrumbs
  • 3 Tbsp olive oil
  • 1 tsp lemon pepper seasoning
  • 2 (22-oz) pkg refrigerated mashed sweet potatoes

Side Dish Instructions

  1. Preheat oven to 425°F. Toss together broccoli, breadcrumbs, oil, and lemon-pepper seasoning on a large lightly greased rimmed baking sheet. Bake 15 minutes or until browned and tender.
  2. Heat potatoes according to package directions.
