Feta and Spinach Baked Gnocchi

Ingredients

  • 1½ (16-oz) pkg potato gnocchi
  • 2 (6-oz) pkg baby spinach
  • 2 cloves garlic, minced
  • 2 Tbsp olive oil, divided
  • 2 Tbsp butter
  • 2 Tbsp all purpose flour
  • 3 cups whole milk
  • ½ cup crumbled feta cheese
  • ½ cup freshly grated Parmesan cheese
  • ½ cup pine nuts

Instructions

  1. Preheat oven to 400°F. Cook gnocchi according to package directions.
  2. Cook spinach and garlic in 1 Tbsp hot oil a large skillet over medium heat 2 to 4 minutes or until spinach wilts. Remove from skillet.
  3. Melt butter with 1 Tbsp oil in skillet. Whisk in flour; cook 1 minute, whisking constantly. Gradually add milk, whisking constantly; cook 2 minutes or until slightly thickened. Stir in feta.
  4. Stir in spinach and gnocchi; spoon into a lightly greased 2-quart baking dish. Sprinkle with Parmesan and nuts.
  5. Bake 15 minutes or until golden.
