Chicken Breasts with Avocado Mayonnaise

Ingredients

  • 1 small avocado, mashed
  • 3 Tbsp reduced fat olive oil mayonnaise
  • 1½ tsp lime juice
  • 1 small clove garlic, minced
  • ⅛ tsp salt
  • ⅛ tsp pepper
  • 3 (6-oz) boneless, skinless chicken breasts
  • 2 tsp Caribbean Jerk seasoning

Instructions

  1. Preheat grill to medium-high heat. Process avocado, mayonnaise, lime juice, garlic, salt, and pepper in a food processor or mini chopper until smooth.
  2. Sprinkle chicken with Jerk seasoning. Grill, covered, 6 minutes per side or until done.
  3. Top chicken with avocado mayonnaise.

Side Dish Ingredients

  • 1 (10-oz) pkg frozen riced cauliflower 
  • ½ small red bell pepper, chopped
  • ½ mango, chopped 
  • 1 green onion, sliced
  • ¼ tsp salt
  • ⅛ tsp pepper

Side Dish Instructions

  1. Cook cauliflower according to package directions. Transfer to a bowl, and stir in remaining ingredients.
