Chicken Breasts with Avocado Mayonnaise
Mango "Rice"Ingredients
- 1 small avocado, mashed
- 3 Tbsp reduced fat olive oil mayonnaise
- 1½ tsp lime juice
- 1 small clove garlic, minced
- ⅛ tsp salt
- ⅛ tsp pepper
- 3 (6-oz) boneless, skinless chicken breasts
- 2 tsp Caribbean Jerk seasoning
Instructions
- Preheat grill to medium-high heat. Process avocado, mayonnaise, lime juice, garlic, salt, and pepper in a food processor or mini chopper until smooth.
- Sprinkle chicken with Jerk seasoning. Grill, covered, 6 minutes per side or until done.
- Top chicken with avocado mayonnaise.
Side Dish Ingredients
- 1 (10-oz) pkg frozen riced cauliflower
- ½ small red bell pepper, chopped
- ½ mango, chopped
- 1 green onion, sliced
- ¼ tsp salt
- ⅛ tsp pepper
Side Dish Instructions
- Cook cauliflower according to package directions. Transfer to a bowl, and stir in remaining ingredients.
