Flat Iron Steak with Sour Cream Sauce
Blue Cheese Mashed Potatoes and Green BeansIngredients
- 1 cup sour cream
- ¼ cup Italian dressing
- 2 Tbsp grated Parmesan cheese
- 1 onion, thinly sliced
- 2 Tbsp minced garlic
- 3 Tbsp olive oil, divided
- 2 lb flat iron steak, trimmed
Instructions
- Stir together sour cream, Italian dressing, and cheese in a bowl; set aside.
- Meanwhile, cook onion and garlic in 1 Tbsp hot oil in a large skillet over medium-high heat, 10 minutes or until onion is very tender. Remove from skillet and keep warm.
- Season steak with salt and pepper, if desired. Cook steak in 2 Tbsp hot oil in same skillet over medium-high heat, 5 to 6 minutes per side or to desired doneness.
- Let steak stand 5 minutes before thinly slicing across the grain; serve topped with onions and sour cream sauce.

- 1 (4-oz) container crumbled blue cheese
- 2 (8-oz) thin green beans
Side Dish Instructions
- Heat potatoes according to package directions; stir in cheese until blended.
- Steam green beans according to package directions; season with salt and pepper, if desired.
