Flat Iron Steak with Sour Cream Sauce

Ingredients

  • 1 cup sour cream
  • ¼ cup Italian dressing
  • 2 Tbsp grated Parmesan cheese
  • 1 onion, thinly sliced
  • 2 Tbsp minced garlic
  • 3 Tbsp olive oil, divided
  • 2 lb flat iron steak, trimmed

Instructions

  1. Stir together sour cream, Italian dressing, and cheese in a bowl; set aside.
  2. Meanwhile, cook onion and garlic in 1 Tbsp hot oil in a large skillet over medium-high heat, 10 minutes or until onion is very tender. Remove from skillet and keep warm.
  3. Season steak with salt and pepper, if desired. Cook steak in 2 Tbsp hot oil in same skillet over medium-high heat, 5 to 6 minutes per side or to desired doneness.
  4. Let steak stand 5 minutes before thinly slicing across the grain; serve topped with onions and sour cream sauce.

  • 1 (32-oz) pkg refrigerated mashed potatoes
  • 1 (4-oz) container crumbled blue cheese
  • 2 (8-oz) thin green beans

Side Dish Instructions

  1. Heat potatoes according to package directions; stir in cheese until blended.
  2. Steam green beans according to package directions; season with salt and pepper, if desired.
