Ingredients
- 2 lb boneless, skinless chicken breasts
- ¼ cup olive oil, divided
- 1 Tbsp Greek seasoning
- 1 pint grape tomatoes, halved
- ¾ cup crumbled feta cheese
- ½ cup halved kalamata olives
- ¼ tsp garlic salt
Instructions
- Preheat oven to 400°F. Toss chicken with 3 Tbsp oil and seasoning in a 13- x 9-inch baking dish. Bake 20 minutes or until chicken is done.
- Meanwhile, combine tomatoes, cheese, olives, 1 Tbsp oil, and garlic salt. Serve chicken with tomato mixture.

- 2 (12-oz) pkg refrigerated garlic and herb mashed cauliflower
- 6 cups chopped romaine lettuce
- ½ cup sliced cucumber
- ½ cup Greek vinaigrette
- ¼ cup sliced red onion
Side Dish Instructions
- Heat cauliflower according to package directions.
- Toss together lettuce, cucumber, vinaigrette, and onion in a large bowl.
