Ingredients

  • 2 lb boneless, skinless chicken breasts
  • ¼ cup olive oil, divided
  • 1 Tbsp Greek seasoning
  • 1 pint grape tomatoes, halved
  • ¾ cup crumbled feta cheese
  • ½ cup halved kalamata olives
  • ¼ tsp garlic salt

Instructions

  1. Preheat oven to 400°F. Toss chicken with 3 Tbsp oil and seasoning in a 13- x 9-inch baking dish. Bake 20 minutes or until chicken is done.
  2. Meanwhile, combine tomatoes, cheese, olives, 1 Tbsp oil, and garlic salt. Serve chicken with tomato mixture.

  • 2 (12-oz) pkg refrigerated garlic and herb mashed cauliflower
  • 6 cups chopped romaine lettuce
  • ½ cup sliced cucumber
  • ½ cup Greek vinaigrette
  • ¼ cup sliced red onion

Side Dish Instructions

  1. Heat cauliflower according to package directions.
  2. Toss together lettuce, cucumber, vinaigrette, and onion in a large bowl.
