Açaí Overnight Oat Parfaits

Ingredients

  • ¼ cup chia seeds
  • 2 (3.5-oz) pouches frozen unsweetened acai puree, thawed
  • ¼ cup water
  • 4 Tbsp pure maple syrup, divided
  • 1 cup old fashioned oats, divided
  • 1 cup 1 percent low fat milk 
  • 1 tsp vanilla extract
  • ¼ tsp salt
  • ½ cup strawberries, halved
  • ½ cup chopped mango
  • ½ cup blueberries
  • ¼ cup sliced almonds

Instructions

  1. Combine chia seeds, açaí puree, water, and 2 Tbsp maple syrup in a bowl; cover with plastic wrap, and refrigerate 2 hours to overnight.
  2. Combine oats, milk, 2 Tbsp maple syrup, vanilla, and salt in a separate bowl; cover with plastic wrap, and refrigerate 2 hours to overnight.
  3. Layer chia pudding and oats in 4 glasses or jars. Top with fruit and nuts.
