Açaí Overnight Oat Parfaits
Ingredients
- ¼ cup chia seeds
- 2 (3.5-oz) pouches frozen unsweetened acai puree, thawed
- ¼ cup water
- 4 Tbsp pure maple syrup, divided
- 1 cup old fashioned oats, divided
- 1 cup 1 percent low fat milk
- 1 tsp vanilla extract
- ¼ tsp salt
- ½ cup strawberries, halved
- ½ cup chopped mango
- ½ cup blueberries
- ¼ cup sliced almonds
Instructions
- Combine chia seeds, açaí puree, water, and 2 Tbsp maple syrup in a bowl; cover with plastic wrap, and refrigerate 2 hours to overnight.
- Combine oats, milk, 2 Tbsp maple syrup, vanilla, and salt in a separate bowl; cover with plastic wrap, and refrigerate 2 hours to overnight.
- Layer chia pudding and oats in 4 glasses or jars. Top with fruit and nuts.
