Ingredients
- ¾ lb boneless, skinless chicken breasts
- 2 tsp vegetable oil
- ⅓ cup cashew pieces, divided
- 1 Tbsp less sodium soy sauce
- 2 tsp brown sugar
- 1½ tsp natural rice vinegar
- 1 small clove garlic
- 2 Tbsp water
- 2 Tbsp chopped fresh cilantro
Instructions
- Cook chicken in hot oil in a large skillet over medium-high heat 5 minutes per side or until browned.
- Meanwhile, process ¼ cup nuts in a food processor until ground. Add soy sauce, sugar, vinegar, and garlic; process until smooth, adding water, 1 Tbsp at a time, until sauce is smooth.
- Add sauce to skillet, reduce heat to medium, and cook 2 minutes or until thoroughly heated. Sprinkle with cilantro and remaining nuts.

- 1 (3.5-oz) pouch boil in bag brown rice
- 1 cup baby spinach
- 1 Tbsp less sodium soy sauce
- 2 tsp sesame oil
- 1 tsp sesame seeds
Side Dish Instructions
- Cook rice according to package directions. Stir in spinach, soy sauce, oil, and seeds, stirring until spinach wilts.
