Ingredients

  • ¾ lb boneless, skinless chicken breasts
  • 2 tsp vegetable oil
  • ⅓ cup cashew pieces, divided
  • 1 Tbsp less sodium soy sauce
  • 2 tsp brown sugar
  • 1½ tsp natural rice vinegar
  • 1 small clove garlic
  • 2 Tbsp water
  • 2 Tbsp chopped fresh cilantro

Instructions

  1. Cook chicken in hot oil in a large skillet over medium-high heat 5 minutes per side or until browned.
  2. Meanwhile, process ¼ cup nuts in a food processor until ground. Add soy sauce, sugar, vinegar, and garlic; process until smooth, adding water, 1 Tbsp at a time, until sauce is smooth.
  3. Add sauce to skillet, reduce heat to medium, and cook 2 minutes or until thoroughly heated. Sprinkle with cilantro and remaining nuts.

  • 1 (3.5-oz) pouch boil in bag brown rice
  • 1 cup baby spinach
  • 1 Tbsp less sodium soy sauce
  • 2 tsp sesame oil
  • 1 tsp sesame seeds

Side Dish Instructions

  1. Cook rice according to package directions. Stir in spinach, soy sauce, oil, and seeds, stirring until spinach wilts.
