Ingredients
- 3 oz rice noodles
- 1 cup shredded rotisserie chicken
- ⅔ cup shredded carrots
- ½ cup shredded red or green cabbage
- 1 small red bell pepper, thinly sliced
- ⅓ cup sweet chili sauce
- 2 Tbsp chopped fresh cilantro
- 2 Tbsp chopped fresh mint
- ⅓ cup chopped peanuts
Instructions
- Cook noodles according to package directions.
- Toss together chicken, carrots, cabbage, bell pepper, sauce, cilantro, and, if desired, mint with hot noodles in a large bowl. Sprinkle with nuts.
