Ingredients

  • 3 oz rice noodles
  • 1 cup shredded rotisserie chicken
  • ⅔ cup shredded carrots
  • ½ cup shredded red or green cabbage
  • 1 small red bell pepper, thinly sliced
  • ⅓ cup sweet chili sauce
  • 2 Tbsp chopped fresh cilantro
  • 2 Tbsp chopped fresh mint
  • ⅓ cup chopped peanuts

Instructions

  1. Cook noodles according to package directions.
  2. Toss together chicken, carrots, cabbage, bell pepper, sauce, cilantro, and, if desired, mint with hot noodles in a large bowl. Sprinkle with nuts.
