Ingredients
- ¾ lb boneless, skinless chicken breasts
- ⅛ tsp salt
- ⅛ tsp pepper
- ½ cup shredded mozzarella cheese, divided
- ¼ cup chopped pepperoncini peppers
- 1½ Tbsp mayonnaise
- 1 oz ⅓ less fat cream cheese
- 1 tsp red wine vinegar
- ½ tsp Italian seasoning
- ½ tsp garlic powder
Instructions
- Preheat broiler. Pound chicken to an even thickness between plastic wrap using a meat mallet; sprinkle chicken with salt and pepper. Cook chicken in a nonstick skillet coated with cooking spray over medium-high heat 5 to 6 minutes per side or until chicken is done.
- Meanwhile, stir together ¼ cup cheese, pepperoncini, mayonnaise, cream cheese, vinegar, Italian seasoning, and garlic powder in a bowl.
- Place chicken on a baking sheet. Spread cheese mixture over chicken; sprinkle with ¼ cup cheese. Broil 2 minutes or until cheese melts.

- 2 Tbsp olive oil vinaigrette
