Ingredients

  • 2 (3.5-oz) pouches boil in bag brown rice
  • 1 (10-oz) container roasted red pepper hummus
  • 6 burrito size flour tortillas
  • 1 (5-oz) pkg baby spinach
  • 3 cups shredded carrots
  • 1½ cups crumbled goat cheese
  • ¾ cup chopped pitted kalamata olives

Instructions

  1. Cook rice according to package directions.
  2. Spread hummus on tortillas. Top with rice, spinach, carrots, cheese, and olives. Fold in sides of tortillas; roll up to completely enclose filling.

Side Dish Ingredients

  • 1 (16-oz) pkg strawberries, quartered
  • 2 Tbsp honey

Side Dish Instructions

  1. Place strawberries in a bowl. Drizzle with honey; toss.
