Greek Vegetable Burritos

Ingredients
- 2 (3.5-oz) pouches boil in bag brown rice
- 1 (10-oz) container roasted red pepper hummus
- 6 burrito size flour tortillas
- 1 (5-oz) pkg baby spinach
- 3 cups shredded carrots
- 1½ cups crumbled goat cheese
- ¾ cup chopped pitted kalamata olives
Instructions
- Cook rice according to package directions.
- Spread hummus on tortillas. Top with rice, spinach, carrots, cheese, and olives. Fold in sides of tortillas; roll up to completely enclose filling.
Side Dish Ingredients
- 1 (16-oz) pkg strawberries, quartered
- 2 Tbsp honey
Side Dish Instructions
- Place strawberries in a bowl. Drizzle with honey; toss.
