Ingredients
- 2 lb boneless, skinless chicken thighs
- ¾ tsp chili powder
- ¾ tsp ground cumin
- ½ tsp salt
- 2 Tbsp olive oil
- 3 limes, halved
Instructions
- Sprinkle chicken with chili powder, cumin, and salt. Cook chicken in hot oil in a large skillet 4 to 5 minutes per side or until done. Remove chicken from skillet.
- Add limes to skillet; cook 2 to 3 minutes or until charred. Squeeze lime juice over chicken.

- 6 ears corn
- 3 Tbsp olive oil
- 2 jalapeno peppers, sliced
- 3 cloves garlic, minced
- 3 Tbsp lime juice
- 1 cup crumbled cotija cheese
- ½ cup chopped fresh cilantro
Side Dish Instructions
- Remove corn kernels from cobs; discard cobs. Cook corn in hot oil in a large skillet over medium-high heat 8 minutes or until lightly browned.
- Add jalapeños and garlic; cook 4 minutes or until jalapeño is tender. Stir in lime juice; sprinkle with cheese and cilantro.
