Ingredients

  • 2 lb boneless, skinless chicken thighs
  • ¾ tsp chili powder
  • ¾ tsp ground cumin
  • ½ tsp salt
  • 2 Tbsp olive oil
  • 3 limes, halved

Instructions

  1. Sprinkle chicken with chili powder, cumin, and salt. Cook chicken in hot oil in a large skillet 4 to 5 minutes per side or until done. Remove chicken from skillet.
  2. Add limes to skillet; cook 2 to 3 minutes or until charred. Squeeze lime juice over chicken.

  • 6 ears corn
  • 3 Tbsp olive oil
  • 2 jalapeno peppers, sliced
  • 3 cloves garlic, minced
  • 3 Tbsp lime juice
  • 1 cup crumbled cotija cheese
  • ½ cup chopped fresh cilantro

Side Dish Instructions

  1. Remove corn kernels from cobs; discard cobs. Cook corn in hot oil in a large skillet over medium-high heat 8 minutes or until lightly browned.
  2. Add jalapeños and garlic; cook 4 minutes or until jalapeño is tender. Stir in lime juice; sprinkle with cheese and cilantro.
