Beef Taco Lettuce Wraps

Ingredients

  • 1½ lb ground beef
  • ½ onion, chopped
  • 1 bell pepper, chopped
  • 4 cloves garlic, minced
  • 2 Tbsp olive oil
  • 4 tsp chili powder
  • ½ tsp ground coriander
  • ½ tsp salt
  • 1 cup canned fire roasted diced tomatoes, drained
  • 2 Tbsp chopped fresh cilantro
  • 2 romaine lettuce hearts, leaves separated

Instructions

  1. Cook beef, onion, bell pepper, and garlic in hot oil in a large deep skillet over medium-high heat until beef is browned and crumbly.
  2. Stir in chili powder, coriander, salt, tomatoes, and cilantro; cook 4 minutes or until thoroughly heated.
  3. Arrange lettuce in stacks of 2 leaves each; fill with beef mixture. Top with radishes, if desired, and Garlicky Guacamole recipe.

  • ½ tsp salt
