Beef Taco Lettuce Wraps
Garlicky Guacamole
Ingredients
- 1½ lb ground beef
- ½ onion, chopped
- 1 bell pepper, chopped
- 4 cloves garlic, minced
- 2 Tbsp olive oil
- 4 tsp chili powder
- ½ tsp ground coriander
- ½ tsp salt
- 1 cup canned fire roasted diced tomatoes, drained
- 2 Tbsp chopped fresh cilantro
- 2 romaine lettuce hearts, leaves separated
Instructions
- Cook beef, onion, bell pepper, and garlic in hot oil in a large deep skillet over medium-high heat until beef is browned and crumbly.
- Stir in chili powder, coriander, salt, tomatoes, and cilantro; cook 4 minutes or until thoroughly heated.
- Arrange lettuce in stacks of 2 leaves each; fill with beef mixture. Top with radishes, if desired, and Garlicky Guacamole recipe.

- 2 Tbsp lime juice
- ½ tsp salt
- ½ tsp pepper
