Grilled Dijon-Herb Chicken
Grilled Red Onion Salad
Ingredients
- ¼ cup chopped fresh thyme
- ¼ cup olive oil
- 3 Tbsp lemon juice
- 3 Tbsp Dijon mustard
- 2½ lb boneless, skinless chicken thighs
Instructions
- Preheat grill to medium-high heat. Combine herb, oil, lemon juice, and mustard. Rub mixture on chicken. Sprinkle lightly with salt, if desired.
- Grill chicken, covered, 9 to 11 minutes per side or until done.
Side Dish Ingredients
- 2 large red onions, cut into ½ inch thick slices
- 3 Tbsp olive oil
- ½ tsp salt
- ½ tsp pepper
- 2 (5-oz) pkg mixed baby greens
- ¾ cup green goddess dressing
Side Dish Instructions
- Preheat grill to medium-high heat. Brush onion slices with oil on both sides. Sprinkle with salt and pepper.
- Grill, covered, 4 minutes per side or until browned and tender. Separate onions into rings.
- Combine onions, greens, and dressing in a large bowl. Toss.
