Grilled Dijon-Herb Chicken

Ingredients

  • ¼ cup chopped fresh thyme
  • ¼ cup olive oil
  • 3 Tbsp lemon juice
  • 3 Tbsp Dijon mustard
  • 2½ lb boneless, skinless chicken thighs

Instructions

  1. Preheat grill to medium-high heat. Combine herb, oil, lemon juice, and mustard. Rub mixture on chicken. Sprinkle lightly with salt, if desired.
  2. Grill chicken, covered, 9 to 11 minutes per side or until done.

Side Dish Ingredients

  • 2 large red onions, cut into ½ inch thick slices
  • 3 Tbsp olive oil
  • ½ tsp salt
  • ½ tsp pepper
  • 2 (5-oz) pkg mixed baby greens
  • ¾ cup green goddess dressing

Side Dish Instructions

  1. Preheat grill to medium-high heat. Brush onion slices with oil on both sides. Sprinkle with salt and pepper.
  2. Grill, covered, 4 minutes per side or until browned and tender. Separate onions into rings.
  3. Combine onions, greens, and dressing in a large bowl. Toss.
