Sheet Pan Cheesy Barbecue Meat Loaf Dinner

Ingredients

  • 2 lb ground beef
  • 2 large eggs, lightly beaten
  • ½ onion, diced
  • 4 cloves garlic, minced
  • ¼ cup almond flour 
  • 1½ tsp salt, divided
  • 1 tsp pepper
  • 1 cup shredded Cheddar cheese
  • 6 Tbsp unsweetened barbecue sauce
  • 2 (12-oz) pkg broccoli florets
  • 3 Tbsp olive oil

Instructions

  1. Preheat oven to 425°F. Mix together beef, eggs, onion, garlic, almond flour, 1 tsp salt, and pepper in a large bowl using your hands until just blended. Divide mixture into 12 portions. Shape each portion into a 4-inch mini loaf.
  2. Sprinkle cheese over 6 mini loaves. Top with remaining mini loaves, and shape into 6 (4-x 2½-inch) loaves, pressing edges to seal. Arrange loaves on one side of a large rimmed baking sheet.
  3. Spread barbecue sauce on loaves. Bake 15 minutes.
  4. Toss together broccoli, oil, and ½ tsp salt. Place on other side of baking sheet. Bake 15 minutes longer.
